Yummy Peanut Butter Cookies- And yes, they are low fat!

I am a recovering sweets addict. I have to have some kind of cookie in the house. It drives me crazy not to! So I was browsing recipes online and made a simple adjustment to a peanut butter recipe I found. Each cookie is only 46 calories! They are absolutely yummy and they really take care of the cookie fix. Plus you don't have to feel awful if you eat more than one! :happy:

Again, this is not my recipe. I found it online and made a change to it. It made them even lower in calories and fat and they tast great.

* 1 1/3 cup flour
* 1 tablespoon cornstarch
* 1 3/4 teaspoon baking powder
* 1 teaspoon baking soda
* 1 heaping teaspoon cinnamon (optional)
* 3/4 cup packed brown sugar
* 1/4 cup granulated sugar
* 1/4 cup applesauce (the original recipe calls for vegetable oil)
* 1/4 cup creamy peanut butter
* 1 1/2 teaspoons light corn syrup
* 1 tablespoon vanilla extract
* 1 egg
* cooking spray
* extra sugar for rolling

Preheat oven to 375. Mix together flour, cornstarch, baking soda, baking powder, and cinnamon. Set aside.
Combine brown sugar, sugar, applesauce, and peanut butter in large bowl. Beat at medium speed until well blended. Add corn syrup, vanilla, and egg.
Stir in flour mixture.
Makes 48 cookies. Roll into balls (The dough is really sticky so they won't be perfect)and place on greased pan. Either roll in sugar and place on pan and flatten with glass. Or I rolled mine, placed them on the pan and then flattened them with a glass that had first been dipped in water and then in sugar.
Bake for about 7 minutes on 375.
Cool and enjoy your guiltless snack!

Again, this is not my recipe. I only made the substitution, but by doing so, it cuts out 12 calories per cookie, and 1.2g. fat! And when you are cutting calories, every one counts!

    I found this recipe online and tried it. It's fabulous! They taste like the real thing!! I love them. And FYI, I tried to substitute the margarine out and use applesauce instead. They tasted really cakey and the applesauce was overwhelming. They didn't taste right. I tried them tonight using the margarine as the original recipe called for--it was perfect! And if you use margarine, it's I think 10 more calories than it would have been if you used applesauce. My suggestion is use margarine. Once again, it’s not my recipe. I am just passing it on because I know how hard it can be to find tasty yet healthier cookie recipes.

    Title: Lynn's Favorite Low-Fat Chocolate Chip Cookies
    Yield: 1

    Ingredients

    1/2 c firmly packed brown sugar
    1/4 c granulated sugar
    3 1/2 tb margarine
    2 ts vanilla extract
    1 egg white
    1 1/4 c all-purpose flour
    3/4 ts baking soda
    1 ds salt
    2/3 c miniature semi-sweet
    -chocolate mors; els

    Instructions

    Preheat oven to 400 degrees.

    In large bowl, combine sugars, margarine, vanilla and egg white. Mix
    until smooth.

    Stir in flour, baking soda and salt. When the mixture is smooth, stir in
    chocolate chips.

    Shape dough into 1-inch balls and place 3 inches apart on an insulated
    baking sheet. Bake for 8-10 minutes or until brown. Cool 5-7 minutes
    before removing from baking sheet. Makes 2 dozen cookies.
