Not as breakfasty as I intended, but...
This morning I thought "hmm... instead of a meal replacement drink, a juice, or some fruit, I'm going to treat myself!"
I'm planning to do some vigorous cleaning and walking today, so here's what I did...
Got two corn tortilla, spooned some tzatziki (greek yoghurt dip) onto them.
Got some Quorn mince (fake meat!) and put some harissa and birdseye chilli flakes in the mix with some salsa (very hot!)
Chopped some red pepper up.
Put the mince on top of the tzatziki and covered it in spinach and watercress and red pepper.
Wrapped it up and... NOM NOM NOM! It tastes a lot better than it looks but I still think it looks kinda colourful and fun!
It is a lot more calorific than the meal I usually eat for breakfast but I feel like it's a pretty good start to the day!
ANYWAY... What are you guys chowing down on today? Anybody else have a great breakfast?

last night's dinner - quichey thing with veggie sausage, fake bacon and tomato, with light cheese on top, with steamed zucchini and asparagus

spicy salmon and sweet potato fishcakes, 273 cals for two
home made crisps, baked, cals of whateer type of potato you use
blueberry and banana pancakes with strawberry topping, 198 for two
spaghetti with turkey and carrot meatballs (using grated carrot as a binder instead of egg), 60 cals per giant meatball

depends how i cook them - i have a gadget which lets me blast them in the microwave for 5 or so mins, then they only go in the oven to crisp up
or if just oven, around 20 mins at 190 but being checked regularly as they can burn so easily and it'll depend on how thickly you've cut them
they do tend to be flatter when only done in the oven, whereas microwaving first produces the more wavy effect.0 -
