food tips for endurance exercise - 100k walk

I'm in training for a 100k charity hike in 33 hours or less next may, london to Brighton (UK)

I'm looking for advice on food nutrition that will best prepare me for endurance exercise. I know carbs are an essential source of energy and protein is good for building muscle, but that's pretty much it, so I am looking for any advice/recipes/tips I can get, both relating to food and endurance exercise.
