I use ground flax for filler in homemade burgers, meatballs and meatloaf. Its also great as a thickening agent for sauces.

I use (or have used) crackers, oatmeal (my favorite), rice and crushed oyster crackers and no fillers at all.

Can't have oats or wheat - I use rice. Or, I've also ground up GF rice krispies - that one turned out the best.

    less processed?
You've taken ground up cow flesh and combined it with ground up fat
Then mixed in some spices and formed it into a loaf

    Good point.

This is a variation of the old Quaker Oats recipe that I use:

2 lb extra lean ground beef or lean ground turkey
    1 tsp salt
    1/4 tsp pepper
1 cup tomato sauce, ketchup, or salsa
    1 lg. egg, beaten
    3/4 c. oatmeal
1 tbsp soy sauce or Worcestershire sauce
    1/2 cup chopped onion

    1. Preheat oven to 350 F
    2. Mix all ingredients thoroughly.
    3. Pack firmly into an ungreased loaf pan
    4. Bake for 1 1/4 hours
    5. Drain off fat and let stand for 5 minutes before slicing

You can also make patties and cook them in a lidded frying pan in a tbsp. of oil. Freeze the patties and heat them individually as you want them.

This was an awesome recipe. I didn't have low sodium katcup on hand, but the calories came out to about 303 per serving with 96% lean ground beef. Didn't have the rolled oats, had to use regular. I even tossed in some dijon mustard in it. Served with broccoli and mashed potatoes the entire meal came out to just over 400 calories.

if you use enough herbs and spices, you won't need breading to hold it together

I have always done rolled oats like so many others here. That is how I have always made it. And eggs, and onions and garlic etc.

I use GF breadcrumbs or any GF unsweetned cereal I have in the house just blitzed in the magimix.

I feel oats would not give the right texture for meatloaf, to me it's just wrong but everyone has their traditions! :)

Just about everyone that eats cow flesh eats it ground up, whether it's ground by machine or teeth. It's hard to swallow a cow whole.

Ahh so that kind of processing is ok?

    Yes. Yes it is.

What is not okay is the addition of water to plump it up, chemicals to alter taste/colour etc or preservatives.

Mincing meat does not alter it in those ways.

Not grain-free, but less processed: rolled oats. They are whole-grain and really good for you!!

Exactly what I was thinking : ) i use oats in my tuna patties, too

I also use oats... but I don't process them in any way... just throw them in. I also like to use apple sauce instead of an egg to help bind it together... keeps it really moist and adds a little sweet with the savory... YUM.

I have always used unseasoned bread crumbs and an egg. The quinoa sounds wonderful!
