Hello all,

Thought I'd share this recipe with you. I've just booked a holiday to Marrakech and thought I'd get in the holiday mood by cooking some Morrocan food. This recipe is delicious, and low calorie too! Enjoy!!

Morrocan chicken with couscous


Serves: 4

Preparation time: 15 Minutes

Cooking time: 25 Minutes

Nutrition per serving: 255 cals, 5g fat, of which 0.8g saturated fat, 20.2g added sugar, 0.3g salt

1 red onion, finely sliced
1 clove garlic, crushed
500g packet chicken mince or 500g chicken breasts, minced
2 teaspoons ground cinnamon
1 teaspoon ground coriander
500g pack fresh plum tomatoes, roughly chopped or 400g can chopped tomatoes
150g ready to eat dried apricots
1 tablespoon tomato puree
Freshly ground black pepper
300g couscous, prepared following pack instructions


Method
1.Heat the oil in a large saucepan, add the onion and garlic and cook for 3-4 minutes.
2.Add the chicken to the onions and cook stirring occasionally for 10 minutes, then add the cinnamon, apricots, coriander, tomatoes and tomato puree. Cover the pan and cook for a further 15 minutes.
3.Season to taste and serve with the couscous.

  • Looks very good! Quick question though...what is minced chicken? I just think of minced garlic, so would it just be chicken cut up very tiny?

    I think so, I've done it with sliced chicken breasts, and also with minced turkey. I'm from the UK, I think in the US 'minced meat' is referred to as ground (e.g ground beef)? I might be wrong though.....!!

    You cna also use whole chiken thighs- this has higher calories, but I think is nicer!
