Low Fat (& Calorie) Spinach and Artichoke Dip

Low Fat Spinach and Artichoke Dip

8 ounces neufchatel cheese, softened (do not use fat free)
1/2 cup light sour cream (do not use fat free)
14 ounces artichoke hearts, undrained
7 1/4 ounces roasted red peppers, drained
1/4 cup parmesan cheese, freshly grated
10 ounces frozen spinach, thawed and squeezed dry

Directions:
-Preheat the oven to 375F and lightly spray a shallow baking dish with cooking spray.
-Mix the light cream cheese, sour cream and artichoke hearts until mixed well, you can use a mixer or a food processor.
-Add roasted bell pepper and Parmesan cheese and mix it until it's creamy.

You can either bake or microwave the dip, below are the directions to both ways:

-To bake the dip: Place mixture into prepared baking dish; add spinach and stir until combined.
-Bake for 25 minutes, stirring half way through (don't skip this step!)
-Dip is done when it is browned and bubbly around the edges.
-If you need to keep it warm, lower temperature in oven to 250F and stir every 10 minutes until dip is served. You can also just reheat it up in the microwave if needed.

-To microwave the dip: Place mixture into microwave safe dish add spinach and stir until combined.
-Cover the dish with plastic wrap, leaving room for steam to escape.
-Microwave on HIGH for 7 minutes or until dip is hot and boiling on the sides - microwaves vary, check often.
-Mix well before serving.

    So... normal Spinach & Artichoke dip? :P

    I know, I know, some people put alfredo into it... but this is actually a pretty standard recipe. Here to second the, "don't use fat free cream cheese." Tried it; does.not.work.

    Alfredo in Spin Dip!? I've never heard of that!

    The recipe that I used to use is similar to this, except it's not low fat or low calorie, but it's soo good! This is similar, just a tiny bit healthier I guess! & No, the fat free cream cheese does not work at all! :)
