Chocolate Covered Cranberries
'Tis the season for cranberries. They have recently started appearing in the markets, so it is a great time to prepare a batch of these tender, juicy, sweet and tart chocolate covered morsels.
Choose either chocolate chips (dark or light), candy melts or a gluten and dairy free brand, each choice works great.
The one surprise technique for transforming these hard little tart berries into a mouthful of juicy sweetness is to freeze them after coating them. When they thaw, they are tender and sweet with just a hint of their tartness. Just lay them out on a waxed paper lined tray and freeze. Once frozen, pack them into a plastic container and they are ready whenever you need them. They are great as munchies, or drop a couple into some hot chocolate or top some vanilla ice cream.
I usually just coat them in the brown chocolate, but you can use the different colors of candy melts or drizzle thin strands of white or colors over your tray of dipped cranberries before freezing them.

Chocolate Covered Cranberries
Ingredients:
- Fresh cranberries (about 1 cup)
- Chocolate candy melts or chocolate chips (about 8 ounces)
Preparation:
1. Rinse and dry cranberries, discarding any bruised or underdeveloped berries.
2. Prepare a tray or platter with waxed paper.
3. Place chocolate into a microwave safe bowl and heat for 20 seconds at a time until almost melted, stirring between cooking times. DO NOT OVERHEAT, because chocolate will seize and be ruined. If your microwave is very powerful, heat the chocolate on a medium power level.
4. Dip each berry in chocolate, allowing the excess to drip back into the bowl.
5. Place each chocolate covered berry on the waxed paper, without touching each other. Don't worry about any little "puddles" around the berry.
6. Place the platter or tray in the freezer and allow to freeze firm. You can then transfer them to a covered plastic storage container and store in the freezer. They only take a short time to thaw.
Nutrition: About 5 or 6 calories per chocolate covered cranberry - So indulge!
