quinoa, salmon and alfalfa stirfry

Just an idea to make dinner interesting on a tuesday evening - I made this for 2 meals -

1/2 a cup quinoa rinsed and boiled
1 cup of mixed veg - baby carrots, broccoli and cauliflower
1 salmon steak - rubbed with salt and roasted in the oven
1 cup of fresh alfalfa sprouts
1 tbl soya sauce
1 tbl oyster sauce
1 tbl curry powder
1 tsp dried chives
1 tbl crushed pepper
1 tsp garlic powder

In a frying pan, spray olive oil thrice and add in the veg and all the seasoning.
Add in the quinoa and alfalfa and mix. Throw in the salmon at the end and break apart with your spoon and mix in nicely.

Each serving is around 250 kcal - which gives you extra space for a sweet treat at the end ;)
