Avgolemono
Boil up some chicken stock with the juice of a lemon and your shredded chicken and a small handful of rice. When the rice is cooked, turn down the heat and thicken the soup with egg just before serving. Do this by beating a ladleful of hot broth into one or two beaten room temperature eggs, then stirring the egg mixture back into the soup.
