Black bean burgers.

I looked at few recipes and made my own with what I had.

1 can of black beans drained and rinsed. 1 medium carrot and half a small onion. Add to food processor. Blend, and then put into bowl. Stir in 1 tbsp chilli powder, 1 tsp seasoning salt, 1 egg, 1/2 cup frozen corn, 1/4 cup flour, and 6 crushed up saltines.

Form into 5 patties. The mixture will be a bit moist and your hands will get icky, but thats ok. Place on greased baking sheet and bake at 350 for about 25 min. Serve on a bun with whatever toppings you like.

Each patty is about 180 cals. I imagine any type of bean would work. You could also spice it up more if you like. I have a 4 year old, so I was a little bit safe. She loved it, and called it a crabby patty.

Also because its not raw meat, you can taste it along the way, and season according to your tastes.
