Pumpkin, Butternut Squash & other winter gourds

It's that time of year again!!! Time for all things pumpkin and winter squash to be made.
Share your favorite recipes or ideas for preparing and eating these winter treats!
Butternut Squash chili cheese "fries"
1 medium butternut squash, peeled and cut into french fry shapes
1/8 tsp salt
1/8 tsp cayanne pepper
1 can turkey or veggie chili (I like Hormel Turkey Chili)
1/2 cup shredded reduced fat Mexican Blend cheese
Pam cooking spray
Preheat overn to 425 degrees F
Dry squash very well with paper towels (sometimes I sprinkle with a bit extra salt first, wait 10 minutes and then do this to get extra moisture out)
Lightly spray a cookie sheet or two with Pam
Arrange squash on cookie sheet in single layer and sprinkle with salt and cayanne pepper
Bake for 40 minutes or so flipping half way through. They should start to crisp some like fries. If not, bake for a bit longer.
Remove "fries" from oven and transfer to a deep baking dish (I like to use my stoneware lasanga dish)
Pour chili over squash and top with cheese.
Bake another 10 to 15 minutes until chili is heated and cheese is melted.
Optional: serve with sour cream and scallions.
Makes 2 enormous servings at around 300 calories each.

2 Delicata squash, wash, sliced length-wise, seeded and then thinly sliced
1 small onion, thinly sliced
3 cloves garlic, smashed but left whole
1 T butter
Salt and fresh ground pepper to taste
Spray 1 small casserole dish with Pam or mist with olive oil. Layer squash, onion, cloves and dot with butter. Sprinkle with salt and fresh ground pepper. Bake @ 350 for 30 - 45 minutes until tender.
Great savory alternative to squash and quite yummy.0
