Vegetarian and going over in Carbs =X

So ... For some reason towards the end of the day I reach my max in carbs which is 105 grams. I am a vegetarian (and gluten free) so eating lean meat all day is not possible, and beans have alot of carbs in them. I need something that I can make a lot of once or twice a week and just grab and go since I have a fairly busy schedule. I love quinoa but 60 grams of carbs in one sitting is a lot! Anyone any suggestions?
