Quinoa recipes for breakfast??

What are your favorite breakfast recipes? Or any for that matter.

I don't usually overthink breakfast, but on the weekends we have more time to cook something up. A healthier alternative to some favourites like french toast and bacon, is quinoa. I found this recipe on pinterest.com. I haven't tried it, but it seems good, like oatmeal. Great for this time of year!

Chia pudding. Delicious. Night before, I mix up a couple tablespoons of chia seeds with quinoa, oats, buckwheat, or whatever else. Then (in my case) blend some frozen berries and almond milk or water and add it to the dry mix. Let it hang out in the fridge overnight and it firms up into a pudding and is all ready in the morning whenever you want to eat!
You could also mix milk of whatever variety with some cocoa powder, or cinnamon/spices, or whatever flavoring you'd like to get different flavors of pudding. If you want in the morning, you can add some slivered almonds, or apple chunks, or fresh berries, or other nuts, etc.
Very versatile, filling, easy, and healthy.0 -
Quinoa flakes (like oatmeal), honey, almonds and walnuts, and fresh blueberries (or raisins if I don't have any blueberries). It's delicious and filling. It's about 300 calories.0

rmccannell - Do you use quinoa or quinoa flakes for your pudding? Sounds awesome. I've done quite a lot of cold oatmeal things, but never thought to put quinoa in it.0

hkclaire - I have used regular quinoa, sprouted quinoa, and quinoa flakes. They give different texture results, so it would depend more on whether you want something chewier or smoother than any taste difference.0
