So this topic is me hoping for a little help so I can, in turn, help my SO. For the past few years he been struggling with some emotional/behavioral problems. He's reached an adult age where some very scary mental illnesses begin to become evident. We've spent some time talking to his doctor about this. He despises the idea of therapy and in an attempt for an alternative his doctor suggested FOOD! He's a tall skinny, guy and the doctor told him to eat at least every 3to4 hours to keep up his blood sugar and make his body chemistry happy (not an exact science, but I'm really hoping it helps) He needs more slow burning carbs and protien. So where do y'all come in? Well, in an attempt to be the fantasticly wonderful girl friend I am, I was thinking of making him some healthy energy bars he could carry around easily and eat with the up most convenience. BUT I NEED RECIPES!!!!!!!!!!!!!!!!!!!! The man is a picky freaking eater, though. Something with cashews and banana would be great. But all suggestions are welcome!!!!!

This is a favorite recipe at my house. My kids beg for them. To make them healthier, I cut the sugar down, and some friends have talked about using agave nectar instead of corn syrup.
You could definitely use cashew pieces as part of the fruit/nuts in the recipe. The recipe makes a 9x9 pan...at my house I have to make a 9x11 pan if I want them to last more than the day!0 -
