So last night i was walking around the kitchen (as you usually do) looking for something to put in my mouth, when i saw these 2 poor bananas i bought like 4 days ago... i thought to myself "hmm banana and peanut butter" so... i turned on the oven 175 deg Fahrenheit.. while that was preheating i did the following -

2 cups of steel cut oats - put them in a bowl and soaked them with soya milk, not too much milk here.. just enough to make them wet - you don't have to soak if its just regular oats

Then i squashed the 2 bananas, added in 1 whole egg, 80g dark brown sugar, 50g of peanut butter and beat it with an electric whisker

Mixed in the oat mixture in the end, added in 1/2 tsp baking powder and chucked in the oven for 35 minutes...

I loved it and brought in some to work today... its around 2000 calories for the whole thing.. and serves around 10 people.. most of the calories come from the oats though, steel cut oats are in fact more nutritious and fibrous.. makes this a perfect breakfast slice as well..
