Pumpkin Oatmeal- Yummy breakfast

I adapted this from a crockpot recipe. Makes 1 serving.

1/2 c. old fashioned oats

1 c. almond milk

1 c. pumpkin

good sprinkle of cinnamon

sprinkle of cloves (I used less than the cinnamon because cloves seem stronger to me)


Stir together well and microwave on 60% power for 3 minutes. Then I added a tbsp on sliced almonds. Love it!

    I forgot to mention, sweeten to taste with whatever you prefer but count those calories because I used Splenda so sweetener calories are not included in my totals.

    Is it fresh pumpkin? Have some frozen pumpkin (from the garden) or is it canned?

    Can you use quick oats? I got those by accident instead of old fashion. I should really go to the store and get them to let me exchange them

    Hmm maybe the almond milk makes a big difference. I tried this with water and it was GROSS. I had to choke it down - and I LOVEEEE pumpkin :(

    Maybe I'll try again with the almond milk this time...

    1 minute microwavable oats 180 calories
    pumpkin puree 1/4 cup 20 calories
    unsweetened almond milk 1/2 cup 15 calories
    pumpkin spice
    honey 1tbs 60 calories
    total cal 275

    Pour almond milk into oats, microwave, take out, mix pumpkin puree, pumpkin spice, and tbs of honey. Eat.

    add chia seeds if you like, or flax to keep you fuller.

    I do this, but add a scoop of vanilla protein powder after cooking, and a bit of nutmeg in addition to cinnamon, and a splash of vanilla extract. I call it pumpkin pie proatmeal.

    ETA: and a tablespoon of ground flax seed. Forgot that 'cause it's a staple in all my oatmeal recipes.
