Pumpkin Spice Muffins

Don't know if this has been posted or not. But I love pumpkin anything and at this time of the year I am usually shoving pumpkin bread in my mouth lol. I heard this was a Weight Watchers Recipe but I don't care I like it lol.

Pumpkin Spice Muffins.

1 box Spice Cake
1 can Libby's Solid pack pumpkin
1/2 cup water
1/2 cup chopped pecans or butterscotch chips (optional)

Preheat oven to 350 degrees. Combine all ingredients. Bake for 20 to 23 minutes. Makes 24 muffins.

    I make the same recipe but with yellow or white cake mix...how are you making 24 muffins? I get like 14...maybe mini muffins...?

    Thus mine are like 165 calories each

    I use a cookie scoop. :o) that's how I get 24. You must be making huge muffins LOL.

    I make this same thing - I use a 1/4 cup to scoop it out and I get 22 muffins out of this... at 98 calories each. I bake for the lowest time on the box and they are always super moist.

    I just made those earlier on. Did not even read this post until now.

    I added two eggs (to make them fluffier) and 1/3 cup whole wheat flour (because I'm in high altitude).
    They smelled so good I could not resist and had to try one -> YUMMY :)

    I got 22 muffins out of the mix with 112 calories each.

    Great recipe - Ihave also used a 1/2 a cup of molasses to change it up a bit.

    For those interested, I played around with the recipe and found these were unbelievable!

    I also doubled it to send to others for holiday treats!

    1 box Spice cake mix
    1 box Yellow cake mix
    1 29 oz can of Libby's pumpkin (or you can use 2 15 oz cans, whichever)
    1 tsp pumpkin pie spice
    1/2 teaspoon nutmeg
    1 tsp cinnamon
    2 to 3 eggs
    1 cup milk


    Bake for around 25 minutes. This got me 30 muffins!

    HOLY HEAVEN these were good. And only at 150 calories each. So not bad. ;)

    where do you find cinnamon chips?? (are they 'melty' like chocolate or butterscotch chips?)

    I've made these without adding the water and got 18 muffins (120cals a piece). They were NOT "big" muffins eaither. They were the size of a normal cupcake. :-\

    Love this! You can also add a few of the cinnamon spice chips (found in the baking aisle) for an extra treat with just a few more calories. :)
