No Grain Hot Cereal

I have a wheat intolerance, which eliminates a lot of standard breakfast options. I adore Cream of Wheat, which is no longer an option. I like oatmeal, but because I am diabetic, my blood sugar doesn't do well with that many carbs, especially first think in the morning. Add in that my gastro keeps nagging about fiber, fiber, fiber and bacon and eggs aren't a wise choice every day.
BEHOLD, my salvation! Extremely tasty, quick, high fiber, low-carb, low-glycemic hot "cereal"
Makes 1 serving
315 calories
21 g carbs (5 net carbs)
16 g fiber!!!
14 g protein
24 g fat (LOTS of Omega 3 from the various seeds)
2 T chia seeds
1.5 T hemp seeds (delicious on their own if you haven't tried them!)
2 t flax meal (ground flax seeds)
1/3 c water
Combine and microwave for 2 minutes.
Optional, but included in my nutritional stats
Stir in
1 T heavy cream
1 t cinnamon
1 packet stevia, or your own favorite sweetener
Further options: A few berries, chopped apple or raisins would also be delicious!
This will be going into heavy rotation over the winter!

There is a pre made commercial cereal with much the same ingredients. Its called Holy Crap - Skinny B. I have been eating it a couple of times a week for past two weeks. Doesnt seem to spike my BG. Its not widely available, but you can find it online...pretty expensive though, but its a nice replacement for oatmeal. I bet your homemade version is alot cheaper!!0

Holy Crap was what originally inspired me to start experimenting after I found out that it would only be available through mail order. I can't say if the HC is actually tastier since what I made was pretty daggone good, but this is much, much cheaper.0
