Easy-Cheesy Vegan Zucchini Fries

This is the result of a little experimenting and most of the measurements were eye-balled...but you can have some tasty, cheesy, delicious zucchini fries that are healthy and awesome.

Ingredients:
1 large zucchini
1 tsp garlic powder
2 tsp miso (opt)
1 tbsp dijon mustard
3 tbsp nutritional yeast
half a lemon
salt and pepper
optional: sriacha, chili flake, onion powder...whatever

So: cut up your zucchini into sticks/wedges. Throw 'em in a mixing bowl. Add the garlic, dijon, miso, and half a lemon's worth of juice. Mix it all up with your hands (the fun part!). Add 2-3 tbsp of nutritional yeast and mix some more. Throw 'em on a baking sheet and into the oven for 15-20 minutes at 350 degrees. I added a little sriacha to mine, but Old Bay or curry powder would be tasty too.

The whole thing is 163cal, 3g fat, 8g protein, 11g carbs and 4g of fiber. This could probably feed two as a side dish.
