Need Food Ideas!

Hey guys; so I came back to MFP to track my calories, because I am trying to gain muscle, and I fear I haven't been eating enough. Today I combined 2 meals for breakfast and found that, yep, I definitely haven't been eating enough.

I've been vegan for a long while, and right now am transitioning out of it into a regular (though clean) diet.

So next week I'll be reintroducing deli turkey into my diet etc, but right now my choices for food are pretty limited.
I need ideas of things to snack on throughout the day!
That are easy to make and mess free and keep well in a lunch box (I work at an elementary school).

Right now all I really have are lara bars.
And hard boiled eggs.

It needs to be milk free. I haven't ventured into milk or cheese yet with dairy; just eggs.
And low carb; I get loads of carbs. Probably too many of them, in fact :(.
