Arabic Chopped Salad

4 med tomatoes diced
1 med cucumber peeled & diced
1 med green pepper ^
4 green onions chopped
1/2 cup chopped parsley
1 tbsp fresh mint 1 garlic clove minced
Juice of 2 lemons (6 tablespoons)
1/4 cup olive oil
salt & fresh ground pepper

6 Servings.

  • I'm an Arab (Palestinian)! This is a shepherd's salad - add some burgul (cracked wheat) and you've got tabouli :wink:

    Love Tabouleh but it is so much work. Especially if you want to make it really as they do in the Shaam area, meaning you have to chop all the ingredients into atom size lol.

    Oh Hey fellow Arab! My Mum makes the best tabouleh, I just do the eating part, otherwise we'll be in the kitchen all day lol!

    Looks delicious.... thanks for sharing this ..... I really must make more use of mint in cooking. It grows almost wild in my garden....
