I love to cook, but with the rise in food costs, I am finding myself leaning towards the high calorie foods at my universities cafe, or fast food.

What I am asking is for some recipes that will not break my bank account, but will still be filling.
I have made crockpot potato soup for the past month or so, but I like variety.
I am looking for anything, soups, entrées, desserts, snacks, you name it.

Here is the recipe to Kittie's potato soup:

1 bag of frozen southern style hash browns
1 can cream of chicken
1 can cream of mushroom
1 can cream of potato
1 box low sodium chicken broth
1 small bag of graded cheese *optional*
1 box low fat / fat free cream cheese
3 tbs ground black pepper

But all ingredients into crockpot except cream cheese.
Turn crockpot on low for 4-5 hours.
An hour before serving add cream cheese.
Stir and let cook rest of time.
The soup is finished when the potatoes are fully cooked.

This will feed 6 -7 people. With one cup as the serving size.

This is a nice soup to cook on a cold day, or if you want a comfort food.

On a day with good sales (the only day I shop) you an get this meal for $10 - $12

  • Buy some chicken thighs/legs on sale, cook in crockpot with salsa (mango salsa is especially good) for 4-6 hrs on low. Shred chicken and serve over rice or use in burritos or tacos. Inexpensive and tasty.
