oh well i sauted red bell pepper, zuccini, carrots (and for me broccoli), served it with white rice and oven baked chicken breast.

so heres the recipe (it was really good and so easy to prepare). yields about 4-5 servings (164-131kcal)

    1/2 cup water
1/3 cup fresh orange juice (not store bought!)
    2 tbsp lemon juice
2 tbsp rice vinegar (which i substitute with 1 1/2 tbsp white vinegar and 1/2 tbsp water)
    2 tbsp lite soy sauce
    1/3 cup brown sugar
1/2 tbsp roughly chopped ginger, peeled (or more for extra spicy)
    1/2 tbsp chopped garlic
1 tsp aji (a spicy sauce like tabasco - optional)
    2 tsp cornstarch
    1 tbsp water
    2 tsp orange zest

Combine water, orange juice, lemon juice, vinegar, soy sauce, brown sugar, garlic, ginger and aji in a sauce pan and bring to boil and stir till the sugar disolves and turn heat to low.

form a paste from water and cornstarch, add to sauce and whisk until smooth.

add orange zest and simmer for 5 more mins,

Hope you like this sauce ;)

Thank you so much for posting. I think this would be really good with salmon too! As a matter of fact, I'm going to try it with Salmon for Monday's dinner.

This was fantastic on salmon! I made up the sauce and used part of it on the salmon and part of it on stir fried veggies. Delish! :)
