Cooking for one

I'm a vegetarian (technically pescetarian) and my roommates give me **** and refuse to eat anything I make. So I cook for myself and I have a hard time figuring out recipes for just me. I don't like doing big batches of stuff and freezing it because I get bored eating the same thing over and over. So I end up talking myself into going to subway or somewhere else instead of eating the meal I made for myself.

I have a mini casserole dish that I use a lot for smothered burritos, baked pasta (that's easy for one person to just measure out a single serving of dry) or "tuna noodle" (peas, tuna, mushrooms and cottage cheese with bread crumbs). I also eat a lot of baked potatoes and I make salmon burgers with canned salmon and egg white but I can't figure out what else to make.

    fish tacos (tilapia/orange roughy)
    stir fry
    shrimp curry
    black beans and rice/black bean salad
    chili
    lentil soup
    gourmet salads, there are a large variety of of leaf lettuces to try
    eggplant parm (egg plant has a meaty texture
    lo mein dishes from thai to japanese, the choices are endless.
    Not sure if you're familiar with tofue.
    Black bean burgers are really good.
    since you eat cheese, spinach and cheese ravioli with a red sauce is really good
    switch up the type of pastas you use. a butter herbed with cheese& spinach tortelini beefed up with a variety of small cut veggies is super good & satisfying.
  • Do you buy the tortellini premade or make your own? That's one thing I wouldn't mind making and freezing since raviolli made with wonton wrappers is so easy.
