try experiminating with them. If they turn out bad atleast they wont be in the cabinet anymore. Applesauce can replace oil and ground flax seeds spun through a processor with warm water makes a eggy like consistancy that is a great egg replacer0

Diet Coke Cake
Mix 1 box cake mix with 1 can diet soda, bake as directed. (adding an egg white or two will help it be less dense).
Mix and match...
Chocolate goes well with diet coke, golden would probably do well with diet sprite. Spice/carrot/yellow all do well with diet sprite. White cake goes well with diet Hansen's (they have fruity flavors; strawberry kiwi, black cherry, etc)0 -
If it were me, I would make the cake using applesauce instead of the oil to lower the calories, have one slice and then take the rest to work so I wouldn't snack on it all myself.0

That sounds good I'll have to try it! Thanks.0

I've heard that using a can of diet pop instead of all the other ingredients makes some good cupcakes. I have to admit that I tried it with diet coke and a chocolate cake mix. It tasted like diet coke (which I don't like, so that may be why I noticed it so much). But I have heard of others who really love it. Might be worth trying? What's the worst that happens, you end up throwing them out anyway? At least you'll know what doesn't work!:laugh:0

I would bake them and bring them into work. :-)0

Add can of diet soda (your choice) to the cake mix and bake as instructed. I just baked chocolate cake mix and diet cherry pepsi into 12 cupcakes yesterday, delicious! The nutrition information would be for the dry mix only not the prepared nutrition information. The possibilities of flavored diet soda and cake mixes are endless. Seltzer water works the same way or flavored carbonated water also.0
