I made this recipe today because we had so many extra cranberries from thanksgiving. I got it from Clean eating magazine
Ingredients
2 cups frozen or fresh strawberries (I substituted cranberries)
4 tbsp sucant (I used brown sugar)
2 tbsp natural strawberry jam
1 cup yellow corn meal
1 cup corn flower (I used whole wheat flour)
1/2 whole wheat pasty flour (I used all purpose)
1 tsp baking soda
2 tsp cream of tartar( I used low fat cream cheese)
1/2 tsp sea salt
1 cup nonfat plain Greek yogurt
1/2 plan soy milk (I used almond milk)
2 whole eggs
1/4 cup plus 1 tbsp raw honey divided
2 tbsp olive oil
1 cup frozen corn kernels (I omitted this step)
1/4 cup low fat cream cheese (I didn't use this much!)
Instructions
Heat oven to 375FUse a 9x9 pan (use non stick spray!!)
IN a sauce pan cook strawberries on medium to high add 2 tbsp of sucan and strawberry jam and stir for 5 minutes. Put in the fridge after wards/ then puree
In a large bowl mix all dry ingrediants
In a blender add yogurt, milk, eggs, 1/4 cup honey, 2 tbsp of sucan, oil and corn . Puree
Add yogurt qnd dry mixture and mix until just barely blended. Don't over mix
Pour half corn bread in the pan. Spoon strawberry puree on top. Top with remaining corn mixture. Place in oven for 30-35 minutes
place cream cheese and remaining honey in a bowl in the microwave for 15 seconds. Drizzle cream cheese mixture over corn bread
Makes 16 squares.
