Golden Harvest Muffins

I took this from a book called "Quick breads". But I just photocopied the recipe so I don't have details on the book. They are really delicious though!!



1 cup all purpose flour

1 cup whole wheat flour

1 cup sugar (I used brown sugar)

2 tsp baking soda

2 tsp cinnamon

1/2 tsp cloves

2 cups shredded apples

1/2 cup shredded carrots

(I added 1/2 cup shredded zucchini)

1/2 cup shredded coconut

1/2 cup raisins (I cut up dates)

1/2 cup chopped walnuts or pecans

3/4 oil (I used 1/4 coconut oil and the rest olive oil)

1/4 cup milk (I used almond)

2 tsp vanilla

2 eggs



Heat oven to 350 F. Combine all ingrediants and cook for 20 to 25 minutes.
