Low carb/Low Sodium for a vegatarian?

Okay so I'm not really a vegetarian but mostly.

I just don't eat ANY fish, no red meat, no pork and I don't really like turkey or any kind of ground meat... so I guess it's easier just to say the only meat I DO eat is chicken I tend to stick to boneless skinless perfection portions as they are very easy to cook and you don't have to do any kind of prep. But chicken is boring and I actually strongly prefer veggie dishes...

Problem is I'm not much of a cook... so I rely a lot on frozen veggie burgers, canned black beans, TONS of frozen meals (tons look at my diary, it's scary) I also have an addiction to Joseph's Flax Tortilla's & Siracha.

I need meals that are quick and easy, inexpensive and low carb. I am able to shop at Whole Foods now as apart of my campus meal plan... so that should help. I just tend to gravitate towards canned soups, frozen dinner, Amy's Frozen Burrito's... I try and go for low low sodium when I can but even so I tend to have a very high sodium in take every day...also my carbs are always really high as well...

I am a distance runner so I don't really think I should do super low carb but I'd like to cut out SOME carbs and def A LOT of sodium but it seems hard to do when I have limited time. share a tiny kitchen with 4 people & don't really eat any meat. So how would you guys recommend I lower my intake of carbs and sodium?

Note I do not have any fancy kitchen items, just pots & pans and things like that... no slow cooker or food processor or anything of that sort...I am just not sure what I can eat that is as quick, easy, cheap but lower in carbs and sodium?

Reasoning= Constantly bloated.

Also if it matters I track my fiber and tend to eat about 30 grams a day

    Lose the grapes (raspberries instead ?), melon, bread, soft drink with sugar if you want to reduce carbs.

    The almonds are good, add some other nuts and seeds of various sorts.

    Have egg with yolk and chicken with skin to get more calories from fat as lower carb means higher something else for the same calories.

    Cutting carbs AND sodium is not a good idea.

    Carbs help the body retain sodium. When on a low carb diet it is very easy to actually not have enough sodium. That's what usually causes the headaches sometimes associated with "carb flu". Some low carb diets even suggest drinking a cup of bouillon daily to ensure sufficient sodium intake.
