Spicey Tomato Soup

Very new only two days in to counting and weighing every thing!! This is a regular lunch time soup so thought I would share with you all.

As you can see I have added choritzo as an OPTIONAL ingredient due to now finding out how high the calories are in a 100g piece :( toooooo tasty to not add!

Spicy Tomato Soup

400g Potatoes - 344 (2 medium potatoes)
200g Onion - 84 (2 medium onions)
160g Carrots - 42 (2 medium carrots)
1 tbsp Honey - 64
765g Tinned Tomatoes - 620 (2 x 14oz tins tomatoes)
1 chicken stock cube - 6
1 tbsp Olive oil - 119
4 tsp Worcestershire sauce - 20
1 tsp tabasco sauce - 0
1.5 liters water - 0
1 tsp paprika - 6
100g Chorizo - 547 Optional

Total Calories - 1852
8 servings of 250ml (2 ladles)
1 serving is 231 calories
1 serving is 163 calories without Chorizo

METHOD:
Peel and chop carrots, potatoes and onion add to saucepan with the 1 tbs of olive oil - give a good shake to coat all and then put on a low heat for a few mins - long enough for the kettle to boil.

Once kettle has boiled add 1 chicken stock cube in a measuring jug with 1.5 lt of boiled water - stir cub until dissolved then add to vegetables in saucepan.

Next add tinned tomatoes - no need to chop just add
Next add the paprika, tabasco, honey and worcestershire sauce and give a stir. Turn the heat up to bring to the boil then reduce the heat to a simmer and leave until vegetables are tender.

Turn off the heat and blend with a hand held blender until smooth and no lumps.

At this stage you are FINISHED just season with salt & pepper to taste.

OPTIONAL EXTRAS:
At this stage I usually add 100g of chopped choritzo and return to the heat to simmer to allow the spicy choritzo to do its magic :)

To make this even more substantial depending on your calorie numbers you could add a few boiled gonocci to the soup to make a real hearty meal.

    Soup sounds delicious. Eight servings sounds rather a lot, do you freeze some of it or do you keep it in the fridge all week?

    bump, sounds yummy. Our family loves chorizo too, they sell a turkey chorizo and just found an veggie chorizo this past weekend, haven't tried it yet...might have to make this soup and see! Thanks

    You can bag and freeze it but in our household two days and its gone:)
