Vegetarian Ideas

Hi All!

Part of a Healthy Weight Loss Challenge I am doing with a group of friends has different challenges during the eight week time frame. This week's challenge is eating Vegetarian.....which is a new experience for me!!

Any menu ideas or suggestions you are willing to share!?!?

    Whatever you normally eat but using Quorn mince/pieces would be the most simple suggestion I could make.

    Try some rice and beans. I just made some spanish brown rice, with chick peas .. very filling and you get your protein.

    I eat a lot of the same kind of things that I did before I became vegetarian/vegan. I do nachos, I just put tons of veggies and beans on them, and no cheese or meat. I make veggie burgers from scratch, etc. Most things that people are used to eating can be made just as tasty and much more healthy without the meat/ animal products. I have two cook books that I use a lot, called the Happy Herbivore and the Everday Happy Herbivore, and they have great recipes. They are simple and use normal indredients most people already have around their house. I think she has a website with some of the recipes listed. The Engine 2 Diet also has a website with a lot of really good stuff on it!

    i am thinking about not eating meat again for while myself.
    i bought some quinoa that i am going to add lots of veggies and beans too as well.. check online.. i always find tons of good ideas just randomly searching the web.
