This was so yummy, goes well with roasted veg and fish.

1 cup of red lentils dry
1 stock cube - any
1 cup of soya mince - i chose savoury for added flavour
1 tsp garlic powder
1tsp dried chives

Bring water to boil, add in the stock cube, once stock has dissolved add in the lentils and cook for 20 minutes.

Once most of the water has evaporated and the lentils are quite soft, add in the soya mince. Soya mince doesn't take too long to cook and should be done in like 5 minutes. It should now have reached a mash like consistency, mix in the chives.

I had this on the side of some super yummy king fish curry.

Was good for 2 meals.
