gluten free muffins

Hey all looking for recipe for gluten free breakfast muffins that are filling, taste good, easy to make and not a lot of ingredients or interchangeable
anyone have any?? Thank you!!!

The Low Carb group has a thread dedicated to Muffin-in-a-minute which are made with flax meal. They are gluten free and quite good. Very filling. I usually have one each morning for my breakfast. http://www.myfitnesspal.com/topics/show/453964-low-carb-muffin-in-a-minute0

i would love some homemade recipes too, not using boxed stuff... my son was just diagnosed and he loves muffins...0

I came up with these for my grandaughter and made them GF/DF, she would say ...mmm, good!
Banana Oatmeal Muffins
21/2 cups GF oats, blend to flour in Magic Bullit or blender
1 banana, mashed
6 Tlbs Eggbeaters {what I have, could use 1 egg 1 egg white}
1 1/2 tsp baking powder
pinch salt
1/2 milk or water if D/F
1/2 sugar
1 teaspoon Guar or Zanthan
Mix and bake. I made 12 muffins
I often make up and have on hand:
6 cups Rice flour, 2 cups Potato Starch and 1 cup Tapioca starch is the best G/F flour blend I've found and I use it. You generally add a teaspoon Xanthan OR Guar per cup. I use Guar because it is about half the price and it works as well.
You could use part flour blend /part oat flour for above muffins.
I also added some Garadelli's Chocolate chips. Blessings0
