Healthier Quinoa Mac and Cheese! (hope the picture works)

All i did was 1. Cook the veggies i wanted in it. I used cucumbers and broccoli. 2. Cook the quinoa as directed. I rinsed it first and added garlic powder to it. 3. Preheat oven to 350. 4. Coat 13x9 pan with cooking spray. 5. Whisk together 4 egg whites and 1cup of skim milk in a large bowl. 5. Then add in 1 cup shredded cheese (i used low fat mozzarella) and the quinoa and veggies. Also i added some red pepper and regular pepper but any other spices u want. I may even add beans next time. 6. Transfer to the baking dish and top with cheese or/and panko. Bake about 30 min It makes 8-12 servings and is about 200-300calories per serving.
