Tomato Couscous recipe

Hello Ladies and Gentleman! I had this last night, and split the dish with my hubby.....1/2 this recipe with 2 cups of steamed broccoli and 3oz grilled chicken comes in under 400 cals! Enjoy!
1 can Delmonte Italian style stewed tomatoes
cooking spray ( I used 1 tbsp EVOO)
1/2 cup onion, finely chopped
1 large clove garlic, chopped
1-2 cups Swanson chicken broth (you have to eye it)
Salt and pepper to taste
Italian seasoning
Fresh parsley (optional)
1 tsp grated parmesan cheese
1/3 cup dry whole wheat couscous
Saute onion, garlic, salt, pepper in EVOO until tender (med high heat)
Stir in 1/2 cup chicken broth and can of tomatoes. Saute 4-5 minutes or until tomatoes start to break up a little (med heat)
Add dry couscous and stir. Add chicken broth until consistancy is slightly soupy.
Cover with lid and turn burner to low. Check every few minutes or so. If liquid evaporates and couscous is not tender, and a little more broth and cover until couscous is tender. Stir in fresh parsley and parmesan right before serving!
I love this as a side dish, or I will eat a serving for a yummy lunch!
