How many carbs should you try to limit each snack/ meal to?
I know I should try to pair them with a protein, right?

It really depends. I think most people recommended no more than 30g every 2 hours but quality counts also. Yes you should pair all your high carbs with protein. You may want to check out the Insulin Resistance Diet from the library. It has good info or pairing your foods. You only have to worry about high carb foods like carrots, potatoes, pasta, bread etc. Pair them with 1 oz of protein per serving and limit yourself to 2 serving every 2-3 hours (a serving is 1/3 cup cooked or 1 slice of bread). You can have all the green leafy veggies you want they don't count as high carb.
