Cooking for one??

Hey, I'm a single mumma and having real issues finding meals that are do able for just one person? And without having a whole heap of leftovers? Any ideas anyone?

    There is actually a magazine called cooking for one. I think that it is published by Taste Of Home. Look it up online and you should be able to find it.

    I'm single and always have to cook for one but I actually enjoy having a "whole heap" of leftovers. :) I take the leftovers and portion them out in containers then stick them in the freezer. It's best if you smoosh plastic wrap down over the leftovers before you put the lid on it to try to keep as much air out as possible and avoid freezer burn. This works for me because, 1, sometimes it's just not so fun to cook for myself. 2, because I can figure out the calories once, and save them as a meal in MFP without having to do it repeatedly. 3, because it's nice to have a variety of meals that are healthy in the freezer and are homemade. If I do make just a small amount of food I generally do marinated chicken tenders baked in the oven and squash of some sort. I also like garden burgers wrapped in lettuce with baked and spicy seasoned sweet potato/ yam "fries."

    Well i cook for one a lot because my bf works swingshift, and also eats different things, and i like to make soups in crockpot and then freeze some or put them in containers for the next few days, but i know you mentioned no leftovers soo...... maybe you could make some half recipes.. orrrrr you could have like salad/grilled chicken. or frozen things?? I keep a bag of frozen chicken and then just put one on the george forman if i feel like a chicken salad.

    I also like to just throw some frozen chicken breasts/tenders in a pan and dump a little yoshida sauce on it and leave it there a day or two and then just throw it in the oven for 30 minutes, have enough for one or two or three nights, however much you put in, and its suppper easy, and my son will even eat it too! and could make some brown rice or something, with enough for just one person..

    I like lean cuisines/healthy choice and i know a lot of people dont but they're easy, i know how many cals, and i dont have to worry about cooking/leftovers. Or maybe lean pockets or canned soups?

    I also eat eggs/cereal a lot, or buy yogurts and mix with granola ... stuff that doesnt go bad if you dont eat it for a while but that doesnt make a lot at once...

    Whole wheat pasta and could just make a few cups worth at once??

    OH or stir fry, buy a bag of frozen veggies and just make enough that you want for dinner?

    Sometimes i buy those frozen fish filets and cook them one at a time? or you couldddddd buy lunch meat and make sandwhiches? haha... im probably not much help
  • Have you been to allrecipes.com yet? You can enter how many servings and recalculate any of their recipes for as many servings as you need, even just one. It's cool.

    i also am just one and always cook to have lots of left overs on purpose as well...do the work once and have a few meals out of it, like the above post i like to portion it all out and freeze it then there's no excuse to not have a healthy work lunch or supper, sometimes when i am really in the mood to cook I do up 2-3 big meals all at once that way i have a variety for the upcoming week(s).

    some one time quick type meals i do when i dont feel like cooking are:
    pesto pita pizza
    nachos
    dinner salads (taco, or salads with egg or meat added for protein)
    wraps

    hot one time meals i would go to like kraft.com website and they have lots of "foil pack" type dinners where you put in you meat + veg + a starch into a aluminum foil package and cook it. easy peasy.
