Just had to share..yummy desert!! Great for diabetics!!!
Pineapple-Blueberry Gelatin Salad (I had to try this out first- it's awesome!!!)
2- (.3ounce) packages sugar free raspberry gelatin mix
1 1/2 cups frozen blueberries
1 (8oz) can crushed pineapple with juice (drained set aside juice)
1 8oz carton of reduced-fat whipped topping thawed
1. add gelatin to boiling water stir until it desolves (save 1/2 cup of the gelatin once it is mixed)
2. mix pineapple juice with water until it equals 1 cup add to gelatin
3. add pineapple and blueberries to gelatin and mix well
4. pour into a 9x13 dish refriderate for several hours
5. fold 1/2 cup reserved gelatin with whipped topping
6. spread whipped topping over firm gelatin.. serve..enjoy!
nutrition facts: calories for 1/2 cup= 53 , total fat 2g , cholesterol-0 sodium-25mg total carbs-7g dietary fiber- less than 1g sugar-5g protein- less than 1 gram!
