I have ground beef at home that I need to use in the next day or so and I would love to have some healthy dinner ideas that use ground beef. I am not a great cook so if you would keep it simple that would be great! :blushing:
I will be cooking for myself and two small kids.
Any ideas would be helpful...

I brown the ground beef and mix it with diced tomatoes and black beans. I serve it with basmati rice and put cheddar cheese on it. The kids love it.0

I love this recipe, it is really easy to make and very tasty too!
Taco Soup
1 lb lean ground beef
1/2-1 onion chopped
1 16 oz can tomatoes
1 16 oz can whole kernel corn with liquid
1 16 oz can pinto or kidney beans with liquid
1 cup salsa
1 package McCormick taco seasoning mix
1 8 oz can tomato sauce
1 cup water if needed
Brown hamburger and onion together. Remove grease. Add remaining ingredients. Simmer for 15 minutes or until all is well mixed and heated through. Serve with corn chips, grated cheese and sour cream if desired.0 -
I like meat loaf. The key is to drain away the fat so I bake mine on a small rack I put in the bottom of the loaf pan.
Add one small egg, one small can crushed pineapple (drained) and some onion flakes. Mix all together. Form into a loaf and put into a loaf pan on a sprayed with cooking with cooking spray (Spray the rack as well). Bake at about 350 - 365 (45 minutes or so) until temperature hits 160 degrees. If desired, brush very lightly with a bit of BBQ sauce. Let stand for a few minutes. Slice and serve.
You will not taste the pineapple, but it is a great way to add some fruit and fiber to your day.0 -

Updated Shepherd's Pie
1-1/4 lb. red potatoes, cut into chunks
3 large cloves garlic, peeled
3/4 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1/2 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese, divided
1 lb. extra lean ground beef
2 Tbsp. flour
4 cups frozen mixed vegetables, thawed
3/4 cup reduced-sodium beef broth
2 Tbsp. ketchup
Make It!
PLACE potatoes and garlic in large saucepan; add enough water to cover. Bring to boil. Reduce heat to low; simmer 20 min. or until potatoes are tender. Drain; return to saucepan. Add sour cream; mash potatoes until smooth. Stir in 1/4 cup of the cheese.
PREHEAT oven to 375°F. Brown meat in large nonstick skillet. Stir in flour; cook 1 min. Add vegetables, broth and ketchup; cook 5 min. Spoon into 8-inch square baking dish; cover with potatoes.
BAKE 18 min.; sprinkle with remaining 1/4 cup cheese. Bake an additional 2 min. or until cheese is melted.0
