Anyone have any super-nummy gluten free recipies?

I have recently (very recently) discovered that I have Celiac Disease. I was wondering if any of you fabulous people have and favorite gluten-free recipe or a hidden website gem? Thanks!

    I do!

    CHEWY DATE AND SEED BARS

    1 cup chopped dates
    1/2 cup water
    1 cup rolled oats
    1 cup hulled, roasted, unsalted pumpkin seeds
    1 cup hulled, roasted, unsalted sunflower seeds
    1/2 cup chopped dried apricots
    1/4 cup toasted sesame seeds
    3/4 packed dark brown sugar
    1/4 cup oat flour
    1/4 cup canola oil
    3/4 tsp salt

    Preheat oven to 350F

    Line 8-inch square pan with parchment paper

    Combine dates and water in small saucepan over medium-low heat. Bring to a simmer and simmer for 4 minutes or until dates are very soft and water has almost disappeared. drain. Reserve.

    Combine oats, pumpkin seeds, sunflower seeds, apricots, sesame seeds, coconut, brown sugar, oat flour, canola oil and salt in a bowl; toss to combine. stir in dates and mix thoroughly. Use spatula to firmly press mixture into prepared pan to make an even layer.

    Bake for 25 minutes or until top is evenly golden. Let cool completely.

    Use parchment to lift baked mixture out of pan and transfer to a cutting board. Use a serrated knife to cut into squares or bars.

    Keep in a sealed container until ready to eat.

    Makes 15 or more small bars.

    Also wanted to add that any of the Paleo/Primal recipes and cookbooks will also be gluten free. Just disregard the diet stuff if it's not your thing. If you are interested in that side of it, Robb Wolf's book is actually pretty entertaining. He's also personally dealt with significant health issues due to gluten intollerance.
