Favorite healthy recipe? Share please.

Hi guys! I'm looking for more easy healthy recipes to make for my family. Here's one of my favorites, but I think my family is getting tired of it. Would really enjoy hearing from you! What are you faves? What are the staple foods in your kitchen? Mine are eggs, kale, chicken breasts, almonds, Fage yogurt, apples, black beans, just to name a few! Look forward to your recipes! Ricotta stuffed chicken breasts (serves 4);

Ingredients:

4 boneless skinless chicken breasts
8oz fat free ricotta
1 egg
2 fresh garlic cloves, minced
1/4 cup parmasean cheese
1 cup fresh spinach, loosely chopped
1/2 cup fresh parsley, finely chopped
1 tbsp freshly chopped chives
1 16 oz can tomatoe sauce (no salt added)
1/4 cup pine nuts(optional)

Directions:

Heat oven to 375.
Wash chicken and slice each down middle
Place in non greased glass baking pan
In bowl, mix ricotta, egg, Parmesan, spinach, parsley, chives and garlic.
Scoop approx 1/4 cup of mixture and stuff into each chicken breast. Use all mixture and distribute accordingly among chicken.
Pour tomatoe sauce evenly over stuffed Chicken breast.
Sprinkle pine nuts in top ( optional).
Bake uncovered for 35-45 mins, or until chicken is fully cooked.

  • One of my favorite recipes: Broiled Parmesan Tilapia
    prep/total time: 20 min Yield: 6 servings

    You'll need:
    6 tilapia fillets (about 6 oz each)
    1/4 cup grated parmesan
    1/4 cup vegetable shortening
    2 tsbp lemon juice
    2 tbsp softened butter
    1 garlic clove minced
    1 tsp basil
    1/2 tsp seafood seasoning (like one of the perfect pinch rubs)

    1. Place fillets on a broiler pan coated with cooking spray. In a small bowl combine the remaining ingredients; spread over fillets
    2.Broil 3-4 inches from the heat for 10-12 min or until fish is flaky

    Nutritional facts:
    1 fillet equals 207 calories
    8g of fat
    94 mg cholesterol
    206 mg sodium
    2g carbs
    33g protein
