Seafood Recipes

I love eating seafood, especially after learning how high in protein seafood can be and so low in fat! I thought it might be fun if I posted oneof my favorite seafood recipes, and perhaps you could share some of yours! for every recipe you post, I'll try and repost another and we can make quite a large collection!
Soy-Glazed Scallops

Yield: 4 servings

You'll Need:
1/4 cup Lemon Juice
2 tbsp Canola Oil
2 tbsp Reduced Sodium Soy Sauce
2 tbsp Honey
2 Garlic cloves Minced
1/2 tsp ground ginger
12 sea scallops

1. In a small bowl, combine the first six ingredients. Pour 1/3 marinade into a large resealable plastic bag. Add the scallops; seal bag and turn to coat. Refrigerate for 20 min.
2.Place remaining marinade in a small saucepan. Bring to boil. Reduce heat and simmer for 8-10 min or until slightly thickened.
3. Drain and discard marinade from plastic bag. Thread scallops onto four metal or soaked wooden skewers. Broil 3-4 inches from the heat for2-4 min on each side, basting occasionally from left over marinade.
