Anyone have a easy low cal meatloaf I could make?

1 box stove top cornbread.
1 lb lean ground
1/4 to 1/3 cup water.
put in muffin tins and bake till done.0 -
I add 2 Tbls of A1 sauce to that recipe...very nummy!0

By 95% lean ground beef and you'll be fine. Or, lean ground turkey. And make sure you don't use a ridiculous amount of bread crumbs.0

But also use a mix ground beef and turkey breast, egg, spices and grated zucchini for the "filler" as opposed to bread crumbs or oatmeal0 -
I mix lean ground beef with ground turkey/chicken. I add chopped onion, grated zucchini and carrot, and parsley. Of course adding bread crumbs and all the spices you like. The large amount of veggies keeps it moist and adds much nutrients. It's a big hit!0

They're called Meatloaf Muffins because the recipe calls for making them in a muffin pan, but you could easily cook it as a full loaf.
I use 1 egg in place of the 3 egg whites and cut the chipotle pepper down to 1 tsp.0 -

I don't think Meatloaf comes in low-cal. He's a pretty big guy. His music is awesome though.0

i left out the pork and added ground beef (VERY lean) and added a lil bit of A 1 sauce. it was amazing! in fact, i am making it for dinner tonight! :happy:0
