Anyone have any healthy crepes ideas?

    I've never fixed it myself. However I have had a crepe with fresh/raw spinach, scrambled eggs (w/ egg whites), red peppers, tomatoes and mozzarella before. It was absolutely delicious and made with healthy ingredients!! ...Maybe with some salsa on the side? Good luck!

    I created a whole wheat crepe recipe:

    Sara's Whole Wheat Crepes
    Makes approx 14-16 crepes

    1 cup skim milk
    2 tsp unsalted butter, melted
    4 egg whites
    1/2 cup water
    1/2 cup whole wheat flour
    1/2 cup white flour
    2 tsp sugar
    1/4 tsp salt

    Combine milk, butter, water and egg whites in a blender and process until combined. Add dry ingredients and blend until batter is smooth. Cover and refrigerate batter for 1 hour

    Heat an 8 inch non-stick skillet over medium high heat. To make a crepe, swirl 1/4 cup of batter so that the entire bottom of the pan is coated. Let cook for 1-2 minutes, or until the sides pull away from the pan. Carefully remove crepe and flip over, cooking other side for approximately 30 seconds. Layer cooked crepes in between layers of wax paper to keep from sticking. Fill and top crepes with desired ingredients. (I filled mine with low-fat cream cheese and topped with mascerated warm strawberries)
