Thai Stir-Fry

Thai Stir-fry.... don't be overwhelmed by the amount of ingredients because you can pretty much put in or take out whichever ones you'd like, that's the awesome thing about stir-fry, this is just the way I choose to prepare it. The sauce is so yummy! And it's something different from the norm. Prep takes about 20 mins depending on how fast you chop, actual cooking time is more like 10mins and this should serve 3-4 people depending on portion size.

For Veggies:
2 tbsp cooking oil (or as needed - just so veggies are lightly coated)
1/4 c white onion, diced
1 c broccoli, chopped
1/2 c carrots, chopped
1/3 c mushrooms, sliced
1/2 bean sprouts, drained
2 cloves garlic, minced
1/4 green onion, chopped
1 tbsp soy sauce (I prefer low-sodium)

For Sauce:
1/2 c peanut butter (natural, creamy, crunchy... whatever u prefer)
2 1/2 tbsp coconut milk (or low-fat milk if u don't have coconut)
1 tbsp lime juice
1 clove garlic, minced
1/2 tbsp soy sauce
1 tbsp hot sauce (such as sriracha or cholula) OR 1/2 tbsp red pepper flakes - to taste (if you don't like spicy don't add these)
1 tbsp water (add a bit more if your sauce seems too thick)

Also add a tbsp or so of chopped cilantro if u like

Other Optional ingredients:
1 lime
2 small chicken breasts, chopped (I suggest hormone free :D )
chopped green onion - garnish

Put a pan or wok on stove on med-high heat. Add oil, then onions. When onions start to soften a bit add everything else EXCEPT green onion. Only add those towards the end because they cook fast and are better not fully cooked. Mix your sauce in a separate bowl - might be a good idea to do this before you start cooking the veggies so you can keep an eye on your pan. Just add sauce ingredients in the order they are listed (though it doesn't matter too much). If you want to add chicken I suggest 2 small breasts chopped, cook in a separate pan while the veggies are frying and add another couple cloves of minced garlic and or a dash of soy sauce to give it some flavor. When chicken is done, add to veggies. When veggies are done turn down heat to low and add sauce (and chicken if you haven't already) and stir so everything is nicely coated. Once you're done it's ready to serve - take the lime (which you may have used for your lime juice in the sauce) and squeeze it over your veggies or chicken. Sprinkle with chopped green onion and voila!

This dish is good as is but if you want those carbs you can serve over rice, or noodles. Although not the healthiest choice, you can cook up some ramen noodles and if the seasoning packet is chicken you can add it right into your peanut sauce for more flavor (and sodium ^_^, ) Then you have easy thai noodles!

    yum! i already took out the stiry fry veggies and chicken this morning just needed a good sauce!
