Delicious vegetable fried rice for only 284 calories!

Ingredients:
2 cups cooked white long grain rice
3/4 cup fresh corn
3/4 cup dices carrots
3/4 cup frozen peas
3/4 cup dices celery
3/4 cup diced broccoli
1/4 cup shopped green onion
4 large eggs
1 tbsp olive oil
4 tbsp soy sauce
Directions:
1. Cook rice and set aside.
2. Heat olive oil in a large pan, and pour in all vegetables.
3. Cook vegetables on medium heat until desired tenderness has been reached.
4. Add 2 cups of rice, stirring constantly.
5. Pour soy sauce into vegetable/rice mixture and continue to stir.
6. Add eggs, continue stirring, and remove from heat when eggs are fully cooked.
Serves 4

9 fat per serving
12 protein per serving
You can also add chicken if you want!
