Gluten Free Diet for IBS sufferers

Hi there. Just discovered that my husband has IBS (irritable bowel syndrome) and this has thrown a whole new problem for us as with his current job he has to take lunches as he can't buy anything from shops because of where he is based and doesn't have access to a microwave. The problem is with having to go Gluten Free to stop him from being ill because of the IBS he can't eat bread, pasta, sausages, cereals, crisps, biscuits etc and our local shop is small and doesn't provide much gluten free produce.
With winter coming and him working outside I need to come up with some lunch ideas for him other than salad which is more a summer lunch. Something that is filling as he is a plasterer and is constantly burning calories so needs to provide plenty of energy.
Any suggestions would be welcome as well as recipes for evening meals that I can cook for us. I'm also going Gluten free so he won't be doing it alone and to make it easier for him as he's finding it hard to adjust with not long being diagnosed with COPD also.

here is one website where you might get some ideas....I have ibs too and have been trying to go gluten free...its tough cuz I love bread lol but they do have Rice bread that is gluten free,,,,also I love the rice cakes made by quaker....no gluten and taste good with peanut butter and jelly or cheddar flavored made into pizzas:) they also have pastas that are made from brown rice that are good so there are lots of choices out there just takes a little research in your grocery store to see what they have. great of you to help him out by doing it with him0 -

Thanks for that just started reading it and its very interesting. I want to do it with him so it'll make it easier with not making him feel like he's missing out and with him having to have everything gluten free it would be alot easier for us to both eat gluten free food at home so his food isn't prepared in an area where gluten food is made also. That link explains all about cross contamination which is what i'm worried about most as he reacts quite badly now if he eats any gluten. Also with having to make gluten free lunches for him it will also be easier to do 2 portions so I can have some as well. :bigsmile:0 -
I was diagnosed with ibs last year and then told in February it is a gluten intolerance. It can be hard to go gluten free, but so worth it, I feel so much better now and when I do have gluten I really know it.
There are all kinds of gluten free products out there, but be careful as I have found they usually are much higher in calories and fats. I have been collecting all kinds of recipes that work for me and make my own breads most of the time now. So if you find a recipe that works for you he can still have his sandwiches. That being said, for me I find the breads taste much better when toasted.
Since he can't heat anything up quinoa salad might be an option for him - I always find it filling. I also like to have boiled eggs on hand and I can always bring a couple of those for lunch with veggies. Be careful to read all labels when you are shopping as there gluten hiding in many products (even some of the rice cakes)

I have IBS too, but my triggers are fatty foods, red meat and dairy. When I'm in the midst of a bad bout, I only eat white rice or finely ground oatmeal, lean chicken breast and starchy fruits and veg while I cycle through, but normally, I eat plenty of gluten without trouble - my favorite food is pasta. I did try gluten free to see if it would make a difference, but it didn't. Isn't it strange how different people have different triggers?
I agree with other posters - there are tons of gluten free products out there now. When I did my gluten free trial several years ago I had a lot of trouble finding things to eat, but times have changed. I'm not sure if the breads have gotten any better - they were horrible when I tried them. I know there are plenty of gluten free pastas - I like brown rice/corn blends. They have a nice flavor and texture. Does your husband like salads? Lettuce can be boring for me, so I like to chop or grate up a bunch of different types of veg and add some chicken or something like that. Add a favorite dressing (check for gluten sources on the label or make your own). :flowerforyou:
ETA: I know you said no salad, but I eat them year-round...they are just so easy and nutritious.0 -
