it's CHEESE! how can you go wrong? and there are soooo many cool ways to do grilled cheese. but if your kids are used to american maybe colby-jack would be a good switch b/c it's mild and softer than some others.... I just can't imagine that any cheese would be bad (expect maybe limburger...or bleu? haha) look up some recipes online and do something out of the ordinary0

So we are giving up all highly processed foods and american cheese has been booted from our diets. I know this seems silly but what other cheeses work well for grilled cheese sandwiches? Ive only ever used american!
You could try a grilled cheese sandwich made with white cheddar and green apples on whole-grain bread.
I looove a white cheddar w green apple sandwich! so awesome. Also Turkey on wheat with harvati, green apple, and dijon or honey mustard. BANGIN'0 -
Like others said, any soft, melty cheese will work. I usually do a cheddar/mozzarella mix (thats what I usually have on hand at home) however I've had every kind of cheese in different restaurants. I love a good grilled cheese!0
