Eat it raw?

Which veggies do you eat raw?

I'm sitting here grudgingly eating carrot sticks with the idea that raw is better for you (in terms of minerals & vitamins) but was told that the beta carotene is more easily released if the carrots are cooked. I also learned that raw beets were better for you than cooked so I'm trying that...didn't even know you could/should eat them raw.

Here's my list:

Kohlrabi
Hakurei turnips

Peas
Green beans
Cabbage & greens (other than kale/chard)

Mushrooms

Ones I usually cook:
Asparagus
Carrots

Kale
Chard
Brussels sprouts

Winter Squash

    Pretty much same as you. Only I don't ate Cabbage and Mushrooms raw... eww! =O

    But guess it also depends from food. Sometimes I cook things I usually don't cook if that's a part recipe...

    Honestly, if you prefer them cooked then cook them! I certainly wouldn't eat raw aubergine, squash, potato or parsnip, and I really dont like raw onion.

    Try juicing. You'll get the full benefits of raw veggies but it's much easier to consume. This is very tasty:

    (recipe used by Joe Cross and Phil Staples, "Fat, Sick & Nearly Dead").

    6 Kale Leaves
    1 Cucumber
    4 Celery Stalks
    2 Green Apples
    1/2 Lemon
    1 piece of ginger

    Kohlrabe and turnips..raw? I didn't even know you could do that!

    Kohlrabi is decent raw...mostly I only have 1 head of it at a time so I figured it wasn't worth busting out a full recipe for it (I get it from a farm share). The turnips are hakurei (salad) turnips...they're pretty much the cutest veggie I've ever seen. I slice them into thin strips and toss them with fresh berries, spinach or lettuce and vinaigrette...sometimes some nuts if I have them. It's an awesome salad.

    I wish I liked juicing...I've tried it but it's not for me. It's partially a texture thing (I don't like smoothies either) and partially the fact that I hate hiding things I love (like cucumber and apple) under kale and greens. I'll hang onto this recipe for when I eventually think "maybe this time will be different" and try it again :)

    I eat all veggies raw, except potatoes, squash and asparagus.

    I love the crunch and texture of raw veggies! I think they taste better, too. I was the kooky kid that would eat an entire veggie platter at parties and leave no room for cookies or cakes.

    Sounds like maybe you're not straining the juice enough. I bought a small sieve and it makes freshly squeezed juice taste much better! ^^ that's one of my favourite juice recipes, too. It's different at first if you're not used to kale, but the energy rush and vitamin load is soo worth it and you begin to crave it over time.
    Try juicing things you love, so you can taste everything.
    Orange/strawberry/ginger/apple is deeeelicious!
    Beet/carrot/green apple/lemon/wheatgrass is also a winning combination

    So my issue might have been that I wasn't straining it at all...but aren't you losing fiber and such if you strain it?

    I eat most vegetables both cooked and raw, so it's easier to tell you which I don't eat raw or cook.

    avocado

    Don't eat raw:
    potatoes
    sweet potatoes
    brussel sprouts
    rutabaga
    dried beans
    plantains
    corn
    spaghetti or butternut squash
    pumpkin

    I've eaten common American turnips raw. IMO they are tastier cooked but they aren't bad as an addition to a slaw or salad if shredded or sliced into 'matchsticks'.
