Newbie CKD Vegetarian (low carb)

Hello everybody,
Started dieting in June and I've lost like 8Kg but just 60% was fat, the rest was muscle tissue (thanks withings scale).

Now I've started CKD diet since monday and let me tell you... I love it.
Yeah, the first couple of days were... funny, really strange, but now I'm really happy.
Didn't know what to eat but having a couple month of food logging experience it has been easy to find foods to eat and those to avoid.

I rely heavily on eggs/eggs white for my diet, any suggestion?
I've found also seitan helps a lot and tofu, although does not seems to be a wel accepted bean in keto diets.

I'm much less bloated and sleep is much better.
