Who says cottage cheese needs to be boring?

So, I've recently been doing a bit of experimenting with foods, in particular pancakes and cakes...

I've discovered this awesome form of delishiousness in the shape of a pancake.

A low carb, low fat, high protein form of delishiousness.

The main ingredients:

Single White - Egg, 1 Egg
Barambah Organics - Quark, 100 g
Health Reflections - Coconut Flour Organic, 7.5 grams
Usn - Pure Protein Igf-1 Vanilla Cream, 30.8 g
Devondale - Long Life Full Cream Milk, 31.25 ml

Put it all in a bowl, the order doesn't matter, and start mixing until you've got a nice little batter. Add extra protein, water, flour as necessary so it's not a sloppy mess or a dried up mixture.

I have my electric stove set to 3 with a non stick pan, as it needs to be cooked reeeeeally slowly. It's quite a delicate mixture and it can fall apart quite easily. Take about 3-4 minutes on the one side, or wait untillit'll flip in one piece, then another 2 minutes or so on the other side.

A few things:
Quark is some fancy European style cottage cheese that I picked up cheap, but I'm sure it'll work with the normal stuff.
Coconut flour definitely adds some serious taste with only a small amount. However normal flour could be substituted.
The protein I use can also be substituted with other protein powders, I've tried with 3 different brands and they all seem to work. If you don't have protein; I'd definitely be using a lot more flour as this is really what holds it all together.
Same with the milk; Use full cream, no fat, low fat, skim. Doubt it's going to make a big difference.
...and an egg white is an egg white. Haven't tried with a full egg, but it's not necessary. It's just the binding element between it all. That being said, you DEFINITELY at least need an egg white.

The main factor is keeping the ratios relevant. Use too much cottage cheese and not enough flour/protein? You're going to end up with mush in a pan. Still tastes good, but definitely not pancake-like.

My additionals for a little extra flavour:

Spiral - Organic Maple Syrup, 5.0 g
Nanna's - Fresh Frozen Raspberries, 12.5 g

All in all, including the maple syrup and raspberries:

Calories: 334
Carbs: 13g
Fat: 14g
Protein: 39g

Flavour: 10/10!
